Canadian Mist
Canadian Mist is a true Canadian whisky. As the first whisky in the world to source its water from the Georgian Bay, Canadian Mist enjoys many natural advantages. The Georgian Bay is not only one of the largest sources of freshwater in the world; it’s also one of the freshest.
For Canadian Mist, only the finest grains from Ontario − corn, rye and malted barley − are chosen. The corn is ground and mixed with Georgian Bay water and spent stillage. Then it’s boiled to extract the starch from the grain.
After cooling, ground malted barley is added to convert the starch in the mash to sugar. Then our specially fermented dry yeast is added, and fermentation starts, which converts the sugar into alcohol.
Next, fermented grain mash is distilled to remove the alcohol. It's distilled not once, not twice, but is triple-distilled in copper, for unmatched refinement and taste.
The base whisky is then intermingled with water and steam. This removes some of the flavor compounds, but a controlled amount is left to enrich the flavor. The proof of the base whisky is reduced with more pure water from the Georgian Bay, and then it is put into the specially charred oak barrels to impart a smooth vanilla flavor and to mellow the taste.
Each white oak barrel is filled and stored in a special, temperature-controlled facility so the whisky can mature year-round. As a result, Canadian Mist is more fully matured and richer in taste.
